Goats Cheese Stuffed Peppers

Not feeling very hungry this evening so thought what can I have that is quick and simple.  Check the fridge and found some peppers that I had purchased at the weekend, so still nice and fresh and some goats cheese, simple.

Turn on oven to heat - 200 degrees





Chop of heads and de-seed peppers and stuff with good quality goats cheese


Place on good quality non stick baking tray baking tray and drizzle with olive oil.


Place in oven for 15 minutes





Remove from oven . Peppers should just have started to go soft and cheese should be melting out









Serve with some Antipasta and salad, enjoy





Total prep and cooking time 25 Mins

  1. This looks ridiculously delicious! I'll bet it's good with some fresh herbs mixed in with the goat cheese, too.

  2. Penny, it was, and so easy to prepare. I shall be doing it all over for Ishbel later on this evening and I my throw some herbs in there too.
